Patty pan squash (Cucurbita pepo) is a scallop-shaped summer squash, best picked small and tender. They have a buttery flavour and hold their shape when cooked.

What it's used for

It can be steamed whole, roasted, or stuffed and works well in Moroccan and Mexican dishes. The skin is thin enough to eat when picked young, so there is no need to peel it beforehand.

Similar to a courgette, patty pan squash needs to be planted in a sunny spot and rich soil that can be consistently watered.

It’s best sown in from April to May under cover.

You can harvest it from July to September, picking the squash young when it is golf-ball to tennis-ball sized.
