Sage

Ready to harvest

Sage (Salvia officinalis) is a perennial, evergreen; a woody, silver-leaved Mediterranean herb with a strong, savoury flavour.

  • Sow: March to May
  • Plant out: March to May
  • Harvest: Any time

What it's used for

Classically paired with roast potatoes, stuffing and brown butter sauces, sage holds its flavour well when dried. It’s also delicious when fried and served in pasta with butternut squash.

Grow your own at home

Sage needs moist but free-draining soil and full sun. Trim it after flowering to keep its bushy appearance.

It can be sown as seed in spring or from cuttings in gardens or containers.

You can harvest the leaves year-round, but they are at their best just before flowering for strongest flavour.
