Wild garlic (Allium ursinum) is a woodland perennial with broad leaves that carry a strong, fresh garlic flavour. It can easily carpet the woodland floor in spring.

What it's used for

The leaves are a flavourful ingredient in pesto, soups and pizzas, while the flowers make for a milder garnish that is great in salads. Seeds can be preserved in vinegar or salt for year-round use.

Grow your own at home

Wild garlic needs moist, shaded soil, much like a woodland floor. It spreads well once established.

It’s best planted as bulbs in autumn.

You can pick leaves in spring before flowering, then the flowers shortly after. Harvest the seed pods and stems at the end of the growing season.
